Are sandwiches a healthy lunch for a toddler?
Your opinion is wanted please Like a sandwich with wheat bread, turkey and cheese. Nothing else on it.

I think it's fine.
I give DD PB&J (although she prefers to eat the PB straight from the jar) Chicken Salad Turkey/Cheese Cheese Sometimes I will even make her an egg sandwich in the morning for breakfast, just to be "different"

But I aslo can see DS eating only the bread and leaving the rest behind.. I want to introduce it, but I just worry he won't want to eat anything but bread. He's such a good eater now.

I guess that is what I was wondering about. DD doesn't have them everyday but we just started to give her some more often just to vary it up. It's easy to pack too for daycare. Are there certain ones that are better?
Other lunches we pack for daycare are:
pierogies (with spinach and feta) pasta w/sauce & meatballs Rice & lentils mac & cheese w/veggies morningstar chick'nuggets Dr. Praegars spinach pancakes
and then yogurt, fruit and crackers.
I am trying to think of other lunch options that are healthy or at least somewhat healthy...any ideas?

You can get turkey without nitrates, applegate farms is a good brand. It still has a lot of sodium though, so I don't give it more than 1 or 2 times a week.
ETA: an alternative to PB&J is sunflower seed butter and jelly. DS is allergic to peanuts, and I give both him and DD the sunflower seed butter, they love it.

You can also buy low sodium cold cuts. I dont give them that often but DS enjoys Ham and cheese.
not sure if you can do this for daycare, but we make tortellini soup with carrots and chicken broth, DS LOVES It.

I give DS the low sodium cold cuts. He has a sandwich 2-3 times per week (about a half of a sandwich at a time) I think it's healthy especially when you serve fruits/veggies as a side.

I make her cream cheese & jam on goldfish bread. (the new pepperidge farm bread shaped like a goldfish.) she loves it. I also pack her a lot of leftovers-- pasta, chicken & peas or broccoli etc. Plus snacks

when dd was smaller...i guess around a 1 1/2 i was so excited that she would eat cold cuts since i figured it was meat other than chicken nuggets. I asked the ped's office about it and they said not to give it to her too often because of the nitrates. now that she's almost 3 we give her deli turkey or chicken probably once a week. i'm fine with it and am happy that she eats it!!

Not all cold cuts have nitrates in them...check out applegate farms, plainville etc. I buy my kids at Whole Foods, but I'm pretty sure you can get it of Amazon as well. Applegate costs maybe $1 more per lb than Borshead and its worth it IMO.
They also have:
Soy butter and jelly on whole wheat with apples and or yogurt hummus and pita dinner leftovers
