I didnt get a bedding set for this reason. I figured it was a waste to spend all that money on a set that we aould not fully use. We are not getting crib until we move in April & DS will be about 4 months by then. So we are just going to use simple sheets & the breathable bumbers.
I am leaning towards doing the same.
I'm slightly disappointed because the bedding I picked out was so freakin adorable but I'll get over it. Future baby's safety is more important.
I was originally planning to fill the crib with tons of cute stuffed animals and accessories but obviously those are all out too.

We use them with DS, he is a very active sleeper and even with the bumpers I hear him slamming his arm/legs into the sides of the crib at night. We never had an issue with DS smushing his face, he always had good head control and would just readjust if uncomfortable. We will keep them in until he starts using them for leverage (which I think is coming soon!)
You have to do what you are comfortable with and what works for your DC. I was/still am a Mom who is comfortable using blankets in the crib, but DH doesnt let me leave any toys in the crib as that makes him nervous. So its really a personal decision.
