asparagus help!

i used the asparagus tips for a different recipe and now i'm left with the stems. is there anything i can do with them or do i suck it up and toss them out?

You can add them to stock or freeze them when you get enough, make a soup.

It you just cut off the tips and still the whole stalk, you can bend it, where it breaks that is the part that is tough/tender. You can roast the tender part and save the tough parts for soups/stock.

Cut off the ends tough end like you would usually do and cook the good part however you usually cook them... grill, roast, sautee Chat Icon

Or cut off the ends and use them for cream of asparagus soup!

How about a quiche with some ham and cheese? Otherwise, I agree with pp. I would just saute them as usual and serve them as a side. But i'm a big fan of asparagus and wouldn't mind not having the tips!

Cut about 2 cups of them into 1 inch peices and mix with 1 cup mayo, 1 cup parmesan cheese, a little garlic powder and pepper. Stir really well - the asparagus may fall apart a little but that's good. Place in a baking dish and put in a 350 oven for 15 -20 minutes until hot and bubbly. It's to DIE for!

Maybe you could slice them really thin on a bias an add to a salad or pasta dish (or vege lasgana).
