asparagus recipe
Anyone have a really good one? Asked my mom what to make for Passover dinner this weekend and she said to make asparagus. Mind you... I'm not much of a cook at all. We also have the asparagus steamer we got as an Engagement gift about 5 - 6 yrs ago. NEVER BEEN TOUCHED
Need something good and idiot proof that I can't mess up! LOL

Asparagus is one of those things that I think is best prepared with minimal fuss. I normally just throw it in a big saute pan with a little olive oil, some freshly minced garlic and some kosher salt. Toss on high heat to get all the stalks covered and seasoned and then cover and turn off heat for a minute or two until it gets to the right temp and texture. I like it tender but still crisp. It's best if you can make it within a few minutes of serving so it doesn't get all wilted.

I like that - or I just roast it with EVOO, garlic and salt.
If you take 1 stalk and bend it, where it breaks is the point where the tough part starts. You can eat it its just tougher. Then line them up and cut at the same point.

I usually roast it. Toss it with a little olive oil, garlic, salt&pepper, and lemon zest, then throw it in the oven at 400 for about 20 minutes.

This is what I do, but I use parmesan cheese and no lemon zest

I boil them ( not too soft) then put in a pyrex with breadcrumbs, salt and pepper lemon and a bit of butter, and bake until all melted and yummy.

Roast them onions or garlic, black pepper and WVOO, sometime I add lemon juice or I top with bread crumbs
Grill them with garlic/garlic powder, black pepper and EVOO
Grill them with onions, pepper and EVOO
satuee with onions
serve with hollaindaise sauce

My two favorite ways:
Roasted at 425 for 20 minutes. I season them with olive oil, salt, pepper and Italian seasoning. When they come out, I pour shredded Mozzarella cheese over them
Sauteed with olive oil, garlic, balsamic vinegar and pine nuts. ( the pine nuts add so much!) I use the same seasoning as above.
