Awesome crockpot salsa chicken recipe!!!
if you know about this already, ignore me. 
1lb chicken
1 large jar of fat free salsa
1 crockpot
OMG!!! It was amazing!! I set it on low for 7 hours and served it over brown rice. even my DH loved it! and it was that easy!

You can add black beans for more fiber next time.
Turn the leftovers into a lasanga - add soft tortilla shells and fat free cheese.
Or take some black beans and chix stock - warm - season w/ cumin/chili powder. Smush to make "refried beans" - put that on a pizza shell and top w/ chix/salsa mixture - top w/ cheese.

I have made this with the addition of mixing the salsa w/cream of chicken soup and coating the chicken cutlets with taco seasoning, soooooooo creamy!

I make something like this too, and have also added corn kernels, peppers and onions. So easy and so good. We shred the chicken and serve it with tortillas, etc.
