AWESOME Meal idea!
So I tried this last night and it was FABULOUS!
Ingredients 3 Egg Whites 1/3 Scoop Whey - Gourmet Vanilla 1/4 cup Pure Pumpkin (Puree) 1/2 Tbsp Almond Milk Unsweetened 1/2 Tbsp Pumpkin Pie Spice 3/4 Scoop Creamy Vanilla Casein 1.5 oz Almond Milk Unsweetened Chopped Pecans Optional (add 35 calories per 1/2 Tbsp) Directions: Whisk the first 5 ingredients. Coat pan with cooking spray (silicone free) and heat. Add Mixture and cook 2-3 minutes on one side, flip and cook other. Transfer to plate and cool a bit. In small container shake last 2 ingredients into a pudding-like consistency. Spread over pumpkin "pancake". Roll lengthwise and cut into spirals. Sprinkle with nuts if you'd like! Makes 1 serving I adjusted the amount of protein to fit my needs. This was SO yummy!
