I made this with 4 chicken breasts. It is definitely yummy.
I made these slight changes in technique: I did not use 1 cup of cornstarch nor dip each individual piece of chicken into the conrstarch and egg, no time for that. Instead I put all my chicken cubes on a plate and sprinkled some cornstarch on top and then turned them over and sprinkled more to make sure that the pieces were covered. Then I put all of the chicken pieces in a bowl with the beaten eggs and used a slotted spoon to remove the chicken in portions so the egg would drip off and then put it in the hot pan. Chicken cooked beautifully, no issues. BUT, bc there is not a lot of cornstarch, the sauce didn't thicken so 15 minutes before taking it out, I dissolved some cornstarch in cold water and added it to the pan, about 1 TBSP at a time and stirred. Sauce thickened nicely.
Next time I would use less sugar though, 3/4 cup is a lot, I also used a splash of apple cider vinegar with the white.
Also, after browning the chicken you can add the chicken and sauce to the crock pot and cook on low. This way you can go out and come home to dinner waiting.
