Re: Breaded Chicken Cutlets...oven baked
I just made some the other night.... I threw some chicken cutlets in a bowl, added some breadcrumbs, grated cheese, salt and pepper and then mushed them all around with my hands. Then I sprayed a baking sheet with some oil, placed the cutlets on the sheet, sprayed them with some oil so everything would stick and they'd get crispy. Then baked them for about 20 minutes. They were pretty good....if I do say so myself!

I do the same but I do coat them in egg before I put them in breadcrumbs. Italian dressing also works really well

Re: Breaded Chicken Cutlets...oven baked
I add a little vegetable oil to my egg. Egg them, then bread them. Then spray pam on the bottom of the cookie sheet and on the tops of the cutlets. Turn half way through cooking.
Otherwise I find them to not 'cook' the breadcrumb. It just kind of sits there all dry and sad.

Re: Breaded Chicken Cutlets...oven baked
Yes, trick from an old roomate...she used non-fat mayo (is there such a thing?) maybe it was low fat? I dont know. i use just the regular hellman's mayo and coat with bread crumbs for Panko and bake at 350. The mayo makes them nice and moist and if you dont tell anyone you used mayo, they'd never know

I have heard of doing this but I'm so...IDK...because I don't really like mayo. Maybe I'll bite the bullett and try!

Re: Breaded Chicken Cutlets...oven baked
I marinate them or just dip them in italian dressing, then in breadcrumbs, then top with diced tomato, and bake at 350 for about 35 minutes. Easy and yummy. I like serving them over cappellini with garlic and oil, but you can serve them with anything.

Re: Breaded Chicken Cutlets...oven baked
salt & pepper the cutlets.
beat 2 eggs, season with salt & pepper, garlic powder and onion powder.
Dredge the cutlets in the egg and then dredge in panko crumbs seasoned with salt & pepper, galric powder, onion powder, paprika, grated cheese and parsley.
Put them on a sheet pan or broiler pan. Drizzle some olive oil on them.
I have a mister for olive oil that works great just for this.

Re: Breaded Chicken Cutlets...oven baked
I line my baking sheet with foil, then I have a heavy duty metal cooling rack that I spray with Pam & then put it on the baking sheet. I feel the breaded chicken (& pork chops) get more crispy when baked on the rack rather flat on the pan.
