Banana crunch crumb cake
This is a pretty easy and delicious cake. I made it tonight. It's a combination of a few recipes that I tweaked to make one cake. DH & I loved it. I was looking for something else to make with all the bananas that get over ripe in my house LOL.
INGREDIENTS
Cake: 1 (18.25 ounce) package yellow cake mix 2 to 4 very ripe bananas, mashed (I used 4, a little too moist, I think 3 would be perfect) 1 teaspoon baking soda
For crumb topping: 1 1/2 cups all-purpose flour 3/4 cup sugar 1 1/2 teaspoons cinnamon 1 1/2 sticks (3/4 cup) cold unsalted butter, cut into small pieces 1 teaspoon vanilla Mix all w/ your hands util crumbly, don't over mix. Refrigerate until ready to use them.
For glaze: 1 & 1 /4 c. powdered sugar approx. 3 Tbs. of milk or half & half few drops of vanilla Just mix together until a nice smooth glaze. Set aside.
DIRECTIONS Prepare yellow cake mix according to package directions. Mash the bananas with the baking soda and stir into the cake mix batter. Pour batter into one greased and floured 9x13 inch baking pan. Cook at 350 degrees F (175 degrees C) for about 40 minutes. Take out and add crumb mixture evenly to the top. Put back in the oven for about 20 more minutes. Let cake cool and then sprinkle w/ powdered sugar (optional) and drizzle glaze all over the top.

Yumm!! Thats sounds really good. I stopped buying bananas since they always go bad. Now I have to buy them just to let them go over ripe to make this!!

that sounds so good, I always just make banana bread.
FYI, you can peel and freeze ripe bananas for future use. (but you can't eat them plain once defrosted they get watery and yucky, but work great in cakes/breads)

Does anyone have a recipe that I can fake yellow cake mix....I can't get that in the UK and that recipe sounds fantastic!

My husband also makes crumble we got from a 3 ingredient cookbook. Sounds gross but it is awesome with ice cream. I'm sure you could od it with bananna. But here is the peach
1 box vanilla cake mix 1 stick margerine Big can peaches in heavy syrup melt the butter and pour evenly over the peaches and cake mix in a 9X13 pan. bake at 350 for 30-40 mins or until golden brown. So good!

Yes, thank you, I'm going to do this next time. Stupid me didn't peel the ones I have in the freezer. I don't even know if I'll be able to use them.

you might be able to. I never not peeled them, but when I defrost the peeled ones, they are so watery, so yours might just come out of the peels and still be ok too.
