Beef with Broccoli

made this tonight and it came out great!!! Just like Chinese food, but without all the oil and heaviness. And best of all I had everything but the beef in my pantry, so the entire meal cost like $5!!

from Betty Crocker's Cooking Basics:

1 lb. beef boneless sirloin steak
1 clove garlic
Hot Rice
1 tbsp. vegetable oil
1/4 tsp salt
dash of pepper
2/3 cup beef broth
1 tbsp cornstarch
2 tbsp water
1 tbsp soy sauce
1 tsp finely chopped ginger or 1/4 tsp ground ginger
1 package frozen broccoli, thawed (original recipe called for snow peas, but hubby doesn't like them)


1. Cut and discard most of the fat from the beef. Cut the beef with the grain into 2-inch strips, then cut the strips across the grain into 1/4 inch slices. Peel and finely chop the garlic.

2. Prepare rice. While rice is cooking, continue with recipe.

3. Heat the skillet over high heat 1 to 2 minutes. Add the oil to the hot skillet. Add the beef and garlic to the skillet. Stir-fry with a turner or large spoon about 3 minutes, lifting and stirring constantly, until beef is brown.

4. Sprinkle salt & pepper over beef and stir in the broth. Heat to boiling over high heat.

5. Mix the cornstarch, water and soy sauce and stir into the beef mixture. Cook, stirring constantly until the mixture thickens and boils. Continue boiling 1 minute, stirring constantly.

6. Stir in the ginger and broccoli (or pea pods). Cook uncovered about 2 minutes, stirring occasionally, until broccoli is crisp-tender when pierced with a fork. Serve over rice.

thanks for the recipe! Can I just ask you how much water is it for this step? I don't see it mentioned in the list - thanks!
