Black Bean and Corn Side Dish
Does anyone have a good recipe for a black bean nand corn dip to serve with tortilla chips. Must be gluten and dairy free. TIA

This is my version of a black bean and corn salad/salsa that people seem to like:
-black beans -corn -red onion -green pepper -tomatoes and i mix it with some evoo and lots of lime juice. sometimes i add red wine vinegar and black pepper as well.

I like this one. It's not really a "dip" but you can certainly eat it with chips!

I make a similar one, except I add in garbanzo and small pink beans also and make a dressing of white balsamic and olive oil and add in a bunch of cilantro.

I typically go off of this recipe: But if i want more southwestern....I'll add black beans to it, fresh lime & lemon, cilantro (omit the parsley), diced jalapenos, splash red wine vinegae, sometimes even cooked shrimp)
Corn Relish Ingredients 2 ears corn, husks and silk removed 2 medium tomatoes, cored and cut into 3/4-inch pieces (2 cups) 2 avocados, diced large 1/2 small red onion, finely chopped 2 tablespoons chopped fresh parsley (I like a little more) 3 tablespoons extra-virgin olive oil 2 tablespoons fresh lemon juice (I like a little more) Coarse salt and ground pepper Preparation In a large pot of boiling water, cook corn until tender, about 5 minutes. Let sit until cool enough to handle, 10 minutes. Cut off tips of corn and stand in a wide shallow bowl. With a sharp knife, cut off kernels from cobs. Add tomatoes, avocados, onion, parsley, 2 tablespoons olive oil, and lemon juice; season with salt and pepper. Toss to combine. Recipe courtesy of Martha Stewart, Today Show
