Breaded Chicken Cuts over pasta or bruchetta
Ok, I made Breaded cutlets last night , normally I freeze them , but figured we'd do left overs tonite & Id jazz it up. Im tossed about what to do with them ..
I bought plum tomatoes & fresh mozarella so I was thinking of doing a bruchetta over the cutlets & call it a night . Or should I make a quick "dirty sauce" dice up the tomatoes out in a pan with some evoo & garlic . cook that up & toss it over angel hair then cut up the chicken into chunks..
what would you make ?

I did breaded chicken cutlets that were left overs. I put spinach over them with melted mozzarella... Broil for a few min ..
then I made a quick fresh tomato sauce with rotini .. I choped up garlic & some onions saute with evoo & then diced up the plum tomato's . a spat of butter & mixed with the rotini came out great
