Breaded Fried Eggplant question?

I admit it...Ive been lazy and have been buying frozen eggplant cutlets so I havent made my own in a million years.

So I have 2 questions...

1. Do you peel your eggplant?

and

2. Do you salt your eggplant and then rinse it???

I don't peel it.

I salt it and soak it in milk.

no.. I salt it first, let it cry for about 5 minutes and then soak it in milk for about 20 minutes. I find it tastes less bitter. I use evaporated milk .. but I don't think it makes a huge difference if you use regular milk.

Bfore I married husband, I never peeled it. however, apparently DH has some sort of eggplant allergy that doesnt bother him when I peel it, so now I do. I soak in salt water first. Egg bread crumbs and fry it on up! I love friend eggplantChat Icon

I'm lazy. I only fry them. no salting. In the rare instance that I do salt the slices, I wait about an hour. I never bread them (I want to taste eggplant, not bread). They go with the skin in the pan.

peel it.

soak it in milk and egg wash

go directly to bread crumb (no rinsing)

I don't peel. I try to cut paper thin. What does salting do? I just dip in egg crumbs and fry in olive oil.

Thanks...I cant for the life of me remember how I used to prepare it. I was traumatized by an ex MIL who was Italian and insisted that I do it her way...I never liked it "her way" but along the way I forgot what "my way" was...Chat Icon Chat Icon Chat Icon

Im thinking it's suppose to remove some of the bitterness of the eggplant...

I slice thin, rinse, flour, egg and breadcrumbs.

The flour, egg and breadcrumbs all get seasoned.

I slice them with the skins on. Then lay them all on paper towel, salt them. Cover with another sheet of papaer towel and place something heavy on them (I usually use my pots & pans) Then an hour later I do flour, egg, breadcrumbs and either fry or bake them, depending on how healthy I am feeling. I've done it without the salt and it's much better if you've done that step. No need to rinse them after the salting.

i peel them and then let them soak in the salt for 30 minutes then i rinse them in water, and squeeze them gently to get out the excess water.

I did what rojerono told me to do...they came out amazing!!!!!!

Are you sure that I didnt plant the eggplant seed? Ive been dying for eggplant parm for 2 weeks!!!! Im sure I must have brought it up at one point during my ramblings...Chat Icon

I peel it. Soak it in water and salt. Then i dip it in breadcrumb then egg wash then breadcrumb again and then i fry it.

Normally I would say yes....but what actually happened was that eggplant was on sale at S&S , and I bought it to be creative ( non fried eggplant, like I would usually do)...

Long story very short, the eggplant ended up gets mushy and alas it went in the trash...So much for my creativity and sale price Chat Icon
