Cheesy breakfast quesidillas

let me get the recipe...its 5 points for 1 i eat it like 3 times a week. I had it this morn it was YUMMY! and SO fast...

Cooking Time: 15 min
Level of Difficulty: Easy

Quesadillas for breakfast? Sure! Ours are a jazzed-up version of a Mexican omelet and toast.


Ingredients
1 spray(s) cooking spray
8 oz fat-free egg substitute
4 slice(s) cooked crisp turkey bacon, crumbled
4 large burrito-size wheat flour tortilla(s)
1/4 cup(s) low-fat shredded cheddar cheese
1/2 cup(s) salsa
2 Tbsp cilantro, fresh, chopped


Instructions
Coat a large skillet with cooking spray and heat over medium-high heat until a drop of water drizzled on pan sizzles. Add egg substitute and reduce heat to low; scramble eggs until firm, about 3 minutes. Set aside and keep warm.

Wipe skillet clean and recoat with cooking spray. Place skillet over medium-high heat and cook one tortilla for 2 minutes. Flip tortilla and place 1/4 of scrambled egg mixture, 1/4 of bacon and 1 tablespoon of cheese down center of tortilla. Fold tortilla in half and cook until filling is hot and cheese melts, about 1 minute more; set aside and cover to keep warm. Repeat with remaining ingredients.

To serve, top each quesadilla with 2 tablespoons of salsa and 1/2 tablespoon of cilantro.

My fave is the Betty Lou's Low Glycemic shakesor Naturade Soy Protein shakes made w/milk (4pts and beyond filling).

1/2 c almond milk - 1pt

on either a bagel or a slice of challah bread (3 points)
Total - 5 points

Sometimes I'll throw a slice of low-fat cheese on, which is another point.

during the week i take my breakfast to work so tis either:
light and fit 80 calorie yogurt - 2 points
oatmeal - 4 points
special k cereal with a little skim milk- 4 points

on the weekends I'll usually do a WW english muffin or bagel with either WW cream cheese or scrambled egg whites and lo-fat cheese

1 Dr. Praeger spinach pancake (2 pts) & 2 slices JennieO Extra Lean turkey bacon (1 pt) = 5 pts total

1 cup Kashi Go-Lean (4 pts) with
1/2 cup Skim Plus (1 pt) = 5 pts total

1 packet plain instant oatmeal (3 pts) with 1 TB peanut butter (3 pts) = 6 pts

Do you eat it at home or work? I eat at work so I'll have chobani or WW yogurt, smart ones breakfast sandwich, or low sugar oatmeal.

I usually have a greek yogurt (3pts)
Sometimes on the weekend I will have some cereal (3pts) and 1/2c skim milk (1pt) (sometimes I slice a banana in it also)
I also bought english muffins (3pts) and put a little jelly (1pt) and sometimes brummel and brown (1pt)
The other morning I sliced up a banana (0pts) into some skim milk (1pt)

My favorite and most filling breakfast is 2 eggs over easy with 2 slices of light whole wheat bread. 6pts. and keeps me full for hours.

Other than that, I will also have a light and fit yogurt for 2 pts. and a piece of fruit or a special K bar for 2pts and piece of fruit.

Sometimes I'll do an eggwhite omelet with a slice of 2% american cheese.
