burnt broccoli

How do you make burnt broccoli?

I keep seeing it on people's menus and would like to try it (big broccoli fans here) but have no idea how to make it.

It's so easy!

I use a nonstick pan, but I also use tin foil for easy cleanup.

For myself and DH I typically use 6 crowns of broccoli. I cut them to pieces about the size of golf balls, some bigger and some smaller. I don't use the stalks.

Preheat the oven to 425 (i like them super burnt, so I put the oven up high. Some people roast them at lower temps.) I drizzle them with extra virgin olive oil, salt and pepper. Roast in the oven for 40 minutes, turning once, until done. You can cook them more or less depending on how burnt you want them.

I sauté garlic in oil first , which I pour on the broccoli florets. I add salt to taste and bake On 350 till it looks burnt.

I made it like this tonight....AMAZING!

Burnt Brocolli
2 large bunches of broccoli
EVOO
Salt & Pepper
4 garlic cloves, peeled & sliced
1 lemon
1/3 C fresh grated parmesan cheese
3 Tbsp toasted Pine nuts (optional)
2 Tbsp julienne basil optional (I didn't use)
Preheat the oven to 425.

Take 4 to 5 pounds of broccoli (I just got two large bunches), cut into florets (but relatively big ones.)

Dry them THOROUGHLY! I used my salas spinner.

Put the broccoli on a cookie sheet. Toss with olive oil, salt and pepper. (5 Tbs olive oil, 1 1/2 tsps kosher salt, 1/2 tsp fresh ground pepper, but I eye it.) 

Add 4 garlic cloves that are peeled and sliced and toss them in too.

Roast in the oven 20 to 25 minutes, until “crisp-tender and the tips of some of the florets are browned.”

When it’s done, take it out of the oven, zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (optional), and 1/3 cup of freshly grated Parmesan cheese. 

Add 2 Tbs julienned fresh basil (optional)

The only changes I make to her recipe are to add a little fresh grated romano to the bread crumbs and to squeeze a bit of fresh lemon on at the finish.

I use Hayley's recipe too and it's A.MA.ZING. I tried to "cheat" the last time I made it and skip the saute on the stove top step and just roast in the oven and my whole family was ready to disown me LOL
