Buttercream icing for cupcakes
My DS has requested cupcakes for his 3rd birthday. I am making them myself and frosting them (which I've never done).
Anyone have a good recipe for a vanilla frosting that will hold up well on a cupcake for a couple of hours? I see people post pics of cupcakes they frost but have no idea how to achieve that look.
Help.

The recipe on the back of the Domino's confectioner sugar box works really well and is very easy to make. I use it most of the time and people love it. Also, if you can, use Kerrygold butter (you can get it in most supermarkets, it is not kept with other butter). It's pricey but makes a world of difference in terms of flavor.
Buttercream Frosting
3 3/4 cups - (1 lb. box) Domino® Confectioners Sugar 1/2 cup - butter (1 stick), softened 3 to 4 tablespoons - milk 1 teaspoon - vanilla extract
In a large bowl with electric mixer at low speed, combine sugar, butter, milk and vanilla. Beat at medium speed 1 to 2 minutes until creamy. If desired, add more milk until frositng is spreading consistency.
Makes enough to fill and frost a 2-layer cake, a 13x9x2-inch sheet cake or 24 cupcakes.
If you want to get the "cool swirl" on the cupcake, use Wilton Tip 1M and a disposable decorating bag (all available in Michaels).

It's pretty much impossible to mess up buttercream, so don't worry, you'll do fine! Use the recipe above and if you find it's too thick, add a little more milk (1 teaspoon at a time) until you get the consistency you want. If you find it's too thin and kind of runny, add more powdered sugar (a little bit at a time!)! If you plan to pipe your icing on your cupcake, you're going to want it to be a littler bit thicker than if you were going to spread it. I find piping it on there to actually be even EASIER than frosting them with a knife. I'm sure you'll do great!
