Can I share? My first attempt at sugar cookies with royal icing...

I wanted to do something fun for Loey's "class" at daycare for their Valentine's day party.

I made mini banana cupcakes with cream cheese frosting (colored pink).

I also did my first attempt at making sugar cookies with royal icing. I used gel coloring to make it pink and piped on white frosting with all of the names of his buddies from his daycare class.

What do you think? They're a bit sloppy, but I'm learning! And it was super fun Chat Icon I used recipes from Bake@350

Definitely try again! This recipe worked REALLY well and it's my first time doing it!

The recipe is actually for a 9x13 pan of banana bars, but I have made them in regular cupcakes and mini cupcake form and they come out great either way! You just have to change the baking time for each. The mini cupcakes took me about 12 minutes or so. The recipe is originally from a blog called Sugar Cooking.

1/2 cup unsalted butter, room temp
1 cup sugar
1/4 cup brown sugar
2 eggs
1 cup full fat sour cream
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup mashed very ripe banana (usually 2-3 bananas)

Preheat oven to 350. Cream butter and sugars. Beat in eggs, one at a time. Stir in sour cream and vanilla. Combine flour, baking soda & salt and then mix in until just combined. Stir in mashed banana. Bake 25-30 minutes for bars, maybe around 18-20 minutes for cupcakes and 12-14 minutes for mini cupcakes (test with toothpick).

For the cream cheese frosting:

8 oz cream cheese (one package Philadelphia)
1 stick butter, room temperature
4-6 cups confectioner's sugar (I usually use all 6 cups)
1 tsp vanilla

Beat cream cheese and butter. Add in sugar one cup at a time until combined. Add in vanilla. Whip up until light and fluffy.

It's a really sturdy frosting so you can pipe it onto cupcakes using a large star tip (that's what I did). To make it look like a rose, I started from the center of the cupcake and went in circles toward the outside.

royal icing might be more commonly known for its ability to hold a ginger bread house together. it's a "frosting" that has the ability to dry hard and hold things together.

i think most recipes have egg whites in it.

I believe you could also use merengue powder instead of egg whites.

They look amazing! Love them!! Those cupcakes look perfect!!
