I have NEVER made this before, but am going to for my son's birthday party. Could you please post your recipe...thanks!

I take s super simple approach, but it always gets good reviews.
I cook the sausage in the oven using a little water in a baking dish and turning so they get that nice brown color. When they are done you will want to reserve some of the water/oil from the cooking process.
On the stove top I put a little oil, and a few cloves of crushed garlic and a chopped jalapeno - warm it up and some large rings of onion. For the onions I use large vidalias and half of a strong yellow onion. I toss them in the oil and then cook down for a few minutes.
Then I add some peppers. I seed them and slice them kind of large. I use Cubanelle primarily - but I'll also through in a few Bell peppers for extra color. Toss with onions and
Toss the peppers so they all get a little bit of oil and then cover and cook on a medium low heat for a few minutes so they cook down just a bit. Add some reserved cooking liquid from the cooked sausage. Add a little salt and pepper to taste.
Now.. here's the thing... if I am making sandwiches, I cut the sausages lengthwise in half and then they get put on a crusty baguette and topped with pepper and onion. If I'm serving in a chafing dish and not as sandwiches I cut the sausage into discs on the bias and just throw them into the pepper mixture and toss.

We usually grill the sausage. Then in a large pan I cook the sliced peppers (a mixed selection is nice if you're doing it for a party) onions (yellow) and I like to add mushrooms with olive oil. I just season with salt and pepper.
We usually eat them on Italian Bread. I'll take the cooked sausage and slice it in discs and mix with the pepper mix. Serve on a platter.
Not much to it but always delicious.

I cook it the old school (read un-healthy) way that my grandmother used to:
I use a combination of sweet and hot italian sausage. Cut each sausage link into about 3-4 pieces. Fry in a pan of olive oil until browned and cooked through. Remove sausage from pan - DO NOT discard oil.
Cut onion into slices. Fry those in the same oil used for the sausage (add more if necessary) until soft and tender. Cut italian peppers into long strips. Add to onions and cook until peppers are also soft and tender.
Put sausage back in the pan with the onions and peppers and mix well.

THis is what I do only I never remove the sausage.
Sometimes I take a really easy way out and It turns out so good. I buy the sweet italian chicken sausage (tastes just like Sausage and even my very picky husband likes it) from trader joes and two bags of frozen peppers and onion (already chopped up and ready to fry) I swear this turns out just as good at my "old school" way of making them

i cook it all in the oven and i usually add potatoes too. oil, onions, mixed peppers, a 15 oz cann of diced tomatoes (seasoned, if you prefer, italian style) and potatoes. if you skip the potatoes, then I add the sausage once the onions and peppers are soft... i use chicken sausage so that doesn't take very long. not sure how long the pork sausage takes. i just throw it all in at 400 degrees; it's really simple and delish.

I don't have a great recipe but I do have a tip:
If you want to mix sweet & hot sausage, cut them differently so you can tell them appart.
My ex-h liked hot and I liked sweet. I cut the sweet ones in 4 pieces on an angle, and I cut the hot ones in 2-3 pieces straight cut.

this is what i do, sometimes I add a some garlic and spices. I have actually been using chicken sausage alot lately too!

i cook it the same way.
in regards to how much to make, it would be depending on how many people you are having and how many other food choices you are offering. with something like sausage, if i was offering other proteins, i would go with the 1/2 sausage per person. so if 30 people 15links. i would cut the links into smaller chunks though, not leave them whole.
