carrots
does anyone have a good recipe for carrots. Especially for my 2 yr old to eat!

I microwave mine with some combo of at least two of these ingredients: brown sugar/honey/maple syrup/butter
It is so good. Probably not the healthiest thing for a 2 year old, but who does not love candied carrots? Plus it is quick and easy to make.

I love them boiled with a pinch of sugar, then mashed with butter, some of the cooking water and a pinch of salt. A little cream if I have it on hand.
Roasted are great too, they get so sweet. Drizzle with some olive oil and sprinkle with salt.

I roast them all the time now. My DH isn't big on veggies and a couple months ago i roasted carrots and he inhaled them. I just toss them with some evoo, kosher salt, and black pepper. Then I roast them at 400-425 till they start getting a little brown. The time has always been different depending on the size and how thick the carrots are. Never been less than 25 minutes though.
