Chicken breast on christmas eve
Do you think baked lemon chicken breast is too ordinary for Christmas Eve dinner?
I want to do something easy that everyone will like. I'm always at a loss because we usually have turkey and ham at other holiday gatherings. SIL isn't really into beef and half of my guests try to eat gluten free. I was thinking of serving with roasted asparagus, butternut squash risotto, and some kind of potato dish. Thoughts? The first year I hosted was so fancy but it's all been downhill from there!

i once made this moroccan chicken with olives and dried fruit (chicken on the bone) that had port and cilantro and other good things, served with curried rice (rice baked in the oven with curry, with raisins, craisins, and mandarin orange segments mixed in at the end). it was chicken, so everyone liked it, but it was fancy.
eta this was the recipe for the chicken http://www.cdkitchen.com/recipes/recs/567/Moroccan-Chicken-with-Dates-O107842.shtml we subbed cilantro for parsley. we also didn't discard the orange slices because they were yummy. this can also be put together the day before and then thrown in the oven day of, the flavors will only get better.

I was just watching the barefoot contessa and she made what looked likea super easy chicken breast with goat cheese, roasted peppers and basil. It looked so yummy i may try making it myself soon!

Funny, it's her lemon chicken recipe that I was going to make! I haven't seen that recipe but I'll have to check it out.
