Chicken recipe

I have chicken (boneless), frozen spinach and feta..
If I micro the spinach (soften it) lay it on top of chicken then sprinkle feta and bake a few mins. would this be ok?

You could do that or flatten the chicken out then spread the cheese and spinach on one side and roll the chicken from the other end, stick a toothpick in it and bake - viola! stuffed chicken

Yes, I did something similiar but with mozz cheese and it was really easy

I sauteed the chix breast in chix broth, a little white wine(from the glass i was drinking Chat Icon ), garlic and lemon juice

then seperately sauteed the spinach in a little bit of olive oil

put the chix in a bake pan , sprinkled mozz cheese on top, then spinach , then the chix broth juice from the pan- baked for about 10 mins so cheese could melt

it was really good!

I make this all the time. It's delicious!

INGREDIENTS
4 skinless, boneless chicken breasts
1/4 cup mayonnaise
1/2 cup crumbled feta cheese
2 cloves garlic, chopped or garlic powder
1 (10 ounce) package frozen chopped spinach, cooked & drained

DIRECTIONS
In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.

Lay out thin chicken cutlets and spoon spinach mixture into chicken breasts and roll them up. You can secure with a toothpick, but I didn't find it necessary.

Heat a small amount of EVOO in a pan and sear chicken, flip a few times so each side is nicely browned.

Bake at 375/400 degrees about 20 minutes.

I'd also roll it, or if they are thick, make a pocket in the cutlet and stuff it...and makes sure you drain the spinach...get a lot of the water out.

I'd also season the spinach/feta combo...maybe add a little bit of finely chopped onion and roasted red pepper. Then, season the chicken w/poultry seasoning. cover w/foil when baking. I'm not sure if just plan spinach & feta over/in chicken would be enough flavor.
