chicken soup recipe?
how do you cook the chicken for the soup? Do you just add it in the pot uncooked at the same time as the veggies?

Yup, that's it! Or you can use the carcass from a rotisserie chicken. It is the bones you need for the flavor in the soup, not so much the chicken meat.

I usually first start off with boiling water, and Boullian cubes, or you can add Chicken broth to the water. I then add the raw chicken to the water and let it boil for 1.5 hours.
Then remove the chicken and skim the oil and fat off the top of the soup.
Take all chicken off the bones and shred.
Add the chicken back into the soup.
Add your veggies and parsley.

I use chicken parts (with bones), simmer in water with a few bayleaves and a bouquet garni (pack of herbs tied with a string) of fresh sage, thyme and a little rosemary. I then pick the meat from the bones, return the meat to the pot, and add chicken boullion, sauteed mushrooms and onions, baby spinach, and believe it or not, corn.
Finally, I add cayenne and a little cream.

you probably don't need it now but here's a recipe that's been handed down to me from many generations.
3-5 lbs of chicken uncooked Big pot 2 onions 4 carrots 4 stalks of celery one turnip one parsnip parsley dill salt, white pepper and garlic
Skin the chicken and put in it a big pot. Cover the chicken with water. Add 1/2 tbls of coarse salt. Bring to a boil. Skim any excess fat off the top.
Add onions cut in half, carrots cut in thirds, the celery, turnip and parsnip. Season with salt, white pepper and garlic powder. Simmer on med high for about an hour and a half. Add parsely and dill. Tie them up in a bunch and drop them in the pot. Cook another 30 minutes. Taste the soup. It may need more salt, pepper..but only add what you want.
When its done, take out the onions, parsnip, celery turnip, parsley and dill and discard leaving only the carrots, chicken and soup.
Take out the chicken and the carrots. Strain the soup into another pot.
You can make thin noodles with it or matzo balls..your choice.
I use kosher chickens because they are soaked and salted already and give it a certain flavor.
It's a labor of love but I do this in under 2.5 hours.

I cook mine in the slow cooker and I put a 3lb whole chicken along with celery, onion, potatos, carrots, garlic and basil. Then I add a can of chicken broth and some water then cook for the day.
