It's always Breakfast Strata in my house!
1 pound pork sausage 6 (1 ounce) slices bread, cubed 2 cups shredded Cheddar cheese 6 eggs 2 cups milk 1 teaspoon salt 1 teaspoon ground dry mustard
Directions
Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Layer bread cubes, sausage, and Cheddar cheese in a lightly greased 7x11 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight. Remove the casserole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C). Bake 50 to 60 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze
Ingredients
Cake: 1 stick plus 2 teaspoons unsalted butter 1 1/2 cups packed light brown sugar 2 large eggs 2 cups all purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 1 cup sour cream 1 teaspoon pure vanilla extract 2 cups peeled, cored and chopped apples
Crumble Topping: 1/2 cup packed light brown sugar 1/2 cup all purpose flour 1/2 teaspoon ground cinnamon 4 tablespoons unsalted butter, softened
Brown Sugar Glaze: 1/2 cup packed light brown sugar 1/2 teaspoon vanilla extract 2 tablespoons water
Directions
Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

My mom always made this for Christmas morning and I always looked forward to it. If DH liked it, I would make it too but he's weird lol.
CREAM CHEESE STUFFED FRENCH TOAST 12-16 slices bread with crust 1 (8 oz.) pkg. cream cheese 1 doz. eggs 2 c. milk 1/3 c. pure maple syrup Cut bread into cubes and place 1/2 in 9 x 14 inch casserole dish. Cube cream cheese and put on top of bread, add remaining bread. Whip eggs, milk and syrup together; pour over entire area. Cover with plastic and let sit overnight in refrigerator. Remove plastic for baking. Bake at 375 degrees for 45 minutes. Let stand 5 minutes before serving. Add additional syrup if desired.

Christmas morning breakfast....
We've had a tradition of cinnamon toast since I was a little kid. Now we still do that along with homemade waffles, eggs, bacon, sausage, and fresh fruit.
