Coconut rice
I made this the other day and it was quite tasty. I usually skip over rice.
I used 150g (sorry I have no idea how to translate that. I would say half a cup and a 1/4) of Jasmine rice. I rinsed that until the water ran clear.
I then put the rice in a pot with 150 ml of water and 150 ml of coconut milk. 150 ml would be a bit less than 3/4 a cup.
I then boiled the rice with the water and coconut milk under low-medium heat for 10 minutes. I think I would do 12 minutes in this case. I pulled it off the heat and put the cover on for a further 10-12 minutes. Check the water at this point. You might need to use more. I served it with a stir fry I made (it was a chicken stir fry with some veggies, soy sauce, ginger, and garlic).

That's one of my favorites! I throw in black beans at the end and we usually eat it with a spicy protein. I have gestational diabetes and white rice is off the menu for me right now, but I'm craving it!!
