1 (10.75 ounce) package chicken flavored rice mix (e.g. Rice A Roni) 1 bunch green onions, chopped 1 (8 ounce) can water chestnuts, drained and chopped 1 cup chopped celery 1 cup chopped cooked chicken breast meat 1/2 cup mayonnaise 1 dash Worcestershire sauce salt and pepper to taste
DIRECTIONS Prepare rice mix as directed on package and chill. To the cooked rice, add the green onions, water chestnuts, celery, chicken, mayonnaise, Worcestershire sauce and salt and pepper to taste. Mix well, chill and serve.

I like insalata di riso. The problem is that I never measure anything when I make it so I found something online that's kind of close to what my family makes and edited a bit here and there:
Serves 4 - 6
Ingredients: 1 1/2 cups (300 g) rice (the grains should not stick) --risotto rice is best
An 8-ounce (200 g) can tuna, drained and shredded,(I get the tuna at an Italian deli - don't use like bumblebee)
1/4 cup pitted, sliced black olives
2 ripe, peeled, seeded tomatoes, diced (or a few cherry tomatoes) proscuitto - not sure how much but cut it into small pieces to mix in
2 hard boiled eggs, sliced or quartered (optional)
1 tablespoon rinsed salted or pickled capers
2 pickled artichoke hearts, sliced (optional)
1/4 cup olive oil
A tablespoon of lemon juice
Salt and pepper to taste (go easy on the salt since you have the capers and proscuitto)
Preparation: Cook the rice in abundant boiling, slightly salted water. Rinse it with cold water and let it drain. Meanwhile, assemble the remaining ingredients. Once the rice has cooled, combine everything in a bowl and chill the salad in the refrigerator.

I had an awesome one at a BBQ a few weeks ago. The "chef" had left already but maybe you can replicate it.
Long grain & wild rice dried cranberries goat cheese and maybe apricots.
If anyone can piece it together I would them.
