Cooking Chicken in a Crock Pot - updated with success
I am planning on making chicken enchiladas using a crock pot recipe. Unfortunately, I do not have a working stove at the moment to cook the chicken ahead of time.
Any advice on how to make the chicken ahead of time in the crock pot so that I can shred/cut it up?

*Updated* I made these tonight and they came out amazing!!! I cooked the chicken for 2 hours on high with the onions and crushed tomatoes and diced tomatoes. ended up taking everything out and made the enchiladas and cooked on high for another 2 hrs. OMG SOOOO GOOD!!!! We winged it - I just wrote down the recipe for future reference

Honestly, I would just buy a roasted chicken from the grocery store and shred it up. It will be much easier.

I would think it would take a long time to cook and it could be rubbery. I made chicken 1x in a crock pot and it was my last.

What is the recipe? I have never precooked chicken in the crock, only along with the actual recipe.
