Cooking quinoa
I cannot for the life of me get my quinoa to look like this ever. My never looks light and fluffy. I know I'm cooking it properly (2 parts liquid to 1 part quinoa) and I let the liquid evaporate. What do I need to do to get it to look fluffy?

I used to eat quinoa (with the same problem you are having) begrudgingly because it is good for you. Try Trader Joe's Organic white quinoa. It's AMAZING!! So much better than the stuff in the yellow/orange box I was getting at the supermarket. Just changing brands made all the difference. I could eat it three meals a day.

Mici, what does your look like? lol. Mine comes out like that. Do you use water or chick/veg broth? Maybe that's the difference?

Rinse the quinoa before cooking.
I cook mine in chicken broth and cook it similar to rice, but I put 2 cups of liquid and 1 cup of quinoa, boil and then cover and simmer till liquid is gone.

I don't rinse the quinoa, but I toast it like I do my other grains. I use broth as well. Should I let it sit to dry out a bit more before I start adding stuff to it after all the liquid is gone?

This. Rinse it before you cook it.

I only use TJ's - red and white, and will do 1 part quinoa, two parts water (sometimes I use broth). I let it come to a boil and then lower the heat for about 15 minutes. That usually does the trick, and then fluff it up and it turns out great.
Last night, i made a pepper and onion stir fry and added qunia to it. so good. I love how versatile it is.
