Cooking with oil
OK, I admit, I'm far from decent in the kitchen.
I was cooking with olive oil the other day and had huge flames rise up from my skillet. How do I prevent this?

It sounds like you allowed some oil to splash up and over the side of the pan. I'd suggest using less oil (unless you are deep frying) - this way when you are turning things, there is less of a likelihood of getting the oil to splatter over. If you ARE deep frying, you need a deeper pan.
If the splatter happened when you weren't turning, use a splatter guard.

ITA! I am not sure exactly why it would flare up on your unless there was splatter. As stated above, maybe use a deeper pan instead of a shallow skillet, use less oil (you only need 1 or 2 tablespoons for most anything) and also don't drop the food down into the hot oil, place it more gently. All of those things should help make it less likely to happen again.

olive oil has a lower smoke point than other oils. Thats why it is not often used for frying. You probably had it get too hot. Try using canola oil or vegetable oil instead. Or cook it on a lower temperature.

if it happens again, do NOT use water to put out a grease fire! You will just make a huge fireball. Make sure you have a kitchen rated fire extinguisher nearby, just in case. (That's all I know about cooking... how to put out fires.... )

Like others have said, oil may have splattered over the side of the pan. You might try using a deeper pan next time. In addition, if you are frying you shouldn't be using olive oil - it has a low smoke point so burns a lot faster than something like a canola or peanut or corn oil.
Never throw water on a grease fire - either cover it up with a lid to contain it (this allows oxygen from getting to it to fuel the fire) or throw some baking soda on it.
