Cornbread & BBQ chicken casserole in crockpot
BBQ Chicken & cornbread casserole.
Package of chicken tenderloins 1 bag of frozen corn 1 small sweet potato 2 cups of BBQ sauce Water 2 boxes Jiffy cornbread mix 2 eggs milk
Directions Spray bottom of crockpot with cooking spray. Dice chicken tenderloins into bite size pieces and place them in the bottom of the crockpot. Peel and dice sweet potato into 1/2 inch cubes. Add to crockpot and mix in with the chicken and corn. Pour bottle of BBQ sauce over the mixture in the crockpot. Add about 1/4 cup of water and stir through. Prepare Jiffy cornbread mix as directed on box and pour over the top of the BBQ chicken mixture. Set to low and cook for 6 hours. Serve BBQ Chicken Cornbread Casserole.
Making it today- got it from here!! Smells awesome. I changed the recipe a little (more sweet potatoes & I put the corn in the muffin mix) so we'll see how it goes!

Made it last week! I loved it. I would have changed the type of bbq sauce I used. Sauce combined with the sweet potato was a little too sweet. Also, when I make cornbread normally I add sour cream and creamed corn. I didn't for this to save calories, but it would have helped with sweetness and made it more moist.

ooooh this sounds good, I think I may not do the sweet potatoes and do reg potatoes, I'm not a fan of sweet

I did add sour cream & creamed corn. I couldn't bear to make it without. I used low-fat sour cream for a false piece of mind.

I made this over the weekend and it came out so dry. I think maybe my crockpot didn't need 6 hours. I might try it again in the future.

I stopped it as soon as the top was done-about 4.5 hrs.
