Day After Christmas informal lunch
My dad's family hasn't seen our new house. They are stopping by the day after Christmas around 1:30 for a very informal lunch. I was wondering what to make. We have a big island in our kitchen so I figured something buffet style. I don't want to be slaving in the kitchen the night before (obviously). Does anyone have any ideas?
TIA!

Re: Day After Christmas informal lunch
I made these once and they were a big hit:
Easy Stromboli:
1 Tube of Pilsbury French Loaf 1/2 lb. thinly sliced ham 2 cups shredded mozzarella cheese
Preheat oven to 375. On a greased cookie sheet or baking stone, unroll the french loaf so that it is approximately 12" x 14". Place ham slices on dough about 1/2" away from all edges. Spread mozzarella over ham slices. From the short end of the dough, begin rolling the dough back into a loaf, encasing the ham and cheese. Pinch ends shut and place on cookie sheet seam side down. Brush with melted butter and sprinkle parmasan cheese if desired. Bake in oven for 20 - 25 minutes until golden brown. Cool 5 - 10 minutes on a wire rack before slicing.
I made them using ham & american, roast beef & mozz. You could do turkey, chicken, etc. Really any type of sandwich combo. Set it up with different condiments or sauces for dipping, some macaroni & potato salad and you're good to go. You can roll them in advance and put them in the oven about 30-40 minutes before you want to serve them.
