How about a one day or overnight trip to Washington DC? You would like the american culture wing of the american history museum if you haven't been there already. There are also a lot of cathedrals to tour and a lot of realy "cool" museums like the spy museum, etc. Philly is also great. South Street is a blast and I love the historical district.

I'd do Salem, MA. I was there 2 years ago around Halloween and they do so much stuff there. For the entire month of October, the whole town transforms! They have witch museums, haunted houses, etc...

You can do New Paltz--there are waterfalls and Mohonk Mountain House is gorgeous--we went "hiking" -- it's a steep walk but nothing terrible and I'm horribly out of shape.
