Instead of an egg, I add half & half--I don;t like the idea of raw egg mixed into it. The half and half makes it nice and smooth!

I dont- my sister is allergic to eggs so my mom never did and I follow her recipe- its delicious either way- as long as you use part skim or whole milk ricotta- the ff is too runny!
