I am sorry I am no help, I am not a fan of corned beef but DH & Sister are. I just put the water in the pot add some pickling spice( if the meat doesn't have it already in the package) and add a bottle of beer let it cook for about 3 hours then near the end I add the potatoes and carrots and the last 10 or 15 minutes I add the cabbage. They love it.

I crock pot mine.
I put potatoes in first.
then cabbage
I take cornbeef, put on top...fat side up.
put seasoning on(comes in packet)
bottle of dark beer.
cook on low...maybe 10 hours?? comes out fantastic. very simple, not overflavored.

OK this is great because the crock pot is so much easier for me. The one we buy comes already in some kind of brine so I assume I don't need anymore spices right?
Then I just dump the beer over the top of everything?
Do you serve anything else with this meal?

my instinct would be to epicurious a recipe with a high 'fork rating'....
