I was going to pre make them and then heat them quickly in the oven to warm them - No??

lol - I am not the best of cooks. I can follow a recipe and it would come out great but when I start to deviate I get into trouble.

Poached cant really be reheated. They will get over cooked, and over cooked poach suck. Maybe just do a scrambled egg, bacon etc instead. HonestlY its easier and less stressful. Lol.

You can do poached eggs ahead of time, but I've never tried it.

Just cook them a minute less and throw them in cold water and put in the fridge. When you are ready to serve them, put them in for the final minute of cooking.

I'd do a dry run if I were you, though.

I did an eggs benedict casserole instead. Had English muffins, Canadian bacon, eggs and hollandaise sauce all in it. Was easy to pre-make and just chuck in the oven.

I think eggs benedict are a restaurant type order so that it can be made fresh.

This. You just have to really time everything well, so as to not overcook.

I often do a variation of eggs benedict at home. Rather than using Canadian bacon, I use lox. DH and I often have brunch at Aqua Grill in the city, and they offer this dish. Sooooo much better than traditional eggs benedict, IMO.

When I'm doing eggs Benedict for a bigger brunch, I set up sternos and keep them covered in the sterno tray. They're pretty easy to make and always a big hit

thanks

I think I may try this. I read some reviews on some various casseroles and a lot of people said that the English muffins were too soggy after "marinating" overnight. Some people toasted them before. I am also using gluten free English muffins - those can be tricky and temperamental.
