1 place setting would be completely acceptable. I mostly only got single settings. Very few people bought more than one.

I got tons of place settings from people at my shower. Most of them gave me 1each. I didn't think it was strange. I was thankful that people got them for us!

I've never heard of the 2 place settings thing either...and think just giving one is perfectly acceptable.

If someone gave me 1 place setting, I wouldn't think it was weird, I would be thankful!
same here.
Also depends on how much they are. Some can get quite pricey
