Easy eggplant recipe
Making a chicken parm for dinner and since we did spaghetti and meatballs the other night and DS is having pizza day at camp I wanted to stay away from a carb side so I picked up an eggplant.
Not that I'm the best chef, but my chicken parm comes out good. LOL!
Just need some ideas on what to do with the eggplant as a healthy side substitute.

you can do eggplant dip, puree it. you can add anything really, garlic, lemon juice, lots of easy recipes online.
you can roast it. evoo, salt and pepper... I usually do 400 degrees... anywhere from 20-40 minutes. yummy that way and super simple.
you can grill the eggplant, I never really like how that comes out though. lots of people like it for some reason I don't.

I actually had an eggplant I needed to do something with last week lol. I grilled it and rolled it up with ricotta mixed with pesto. Loved it!!
