I use allrecipes.com and always find great easy recipes there...
two of my favorites:
baked chicken nuggets
Thighs on Rice
For the rice recipe, I use all kind of chicken parts, and I like to sear the chicken before I add the rice.

I just made chicken fajitas - I used Old El Paso kit - it was good, peppers and onions.
Grilled chicken and salad?
Stir Fry?
Pasta with chicken - peas, onions, cherry tomatoes (or sundried), and bacon (optional, but oh so good:))
