Eating healthy - the quarantine way
It’s hard to find meat and fresh fruits & veggies so what are you cooking that’s healthy? I can’t just eat pasta and rice for 2 months.

We’ve been eating the way we always eat so far with a protein and veggies. By me, the stores are fully stocked with veggies.

Some of the only meat I could find Monday was perdue shortcut grilled chicken so tonight we'll have apple pecan chicken salads and another night chicken wraps. I allso grabbed a bag of frozen shrimp but not sure what we'll do with that yet. I have frozen stir fry veggies so that's definitely a possibility.

Oh and I'm planning white bean spinach soup tomorrow bc my fresh spinach doesn't look like it's going to last much longer.

Eating healthy - the quarantine way
I'm using up my fresh veggies & fruits first. I have chicken & Shrimp (for DH & DD, I don't eat meat). I have a bunch of tofu & tempeh for me. I'm making DD eggs/omelets for lunch/breakfast). We are still able to get fresh fruits & veggies- but not sure if I will be going back to the store. They were out of frozen- I have some. We did get bread to freeze & almond butter & jelly/honey for sandwiches. I have lots of beans too- which I'm used to eating in meals since i don't eat meat. It's def a little harder.

Chili pancakes and eggs
I have a lot frozen, so that helps. I am trying to eat through some of the older stuff in my freezer.

DH only eats organic meat and fresh veges- he eats nothing processed and no carbs or pasta or rice- and he hasn't changed the way he eats at all. He has gone to the stores and gotten what he needs this week. Everything was pretty stocked Some places were scarce on the produce but he would find it elswhere or the next day

the only item i haven't been able to find are fresh eggs.
i would love to bake, but can't.
for the most part, we've been eating the way we usually do. i have noticed that i'm snacking more on the weekends. i need to cut that out!

We have also been supporting the local restaurants by getting takeout. Last night we had healthy and delicious salads from the local Mediterranean place.
