Egg white omelet
Anyone have a really flavorful egg white omelet recipe? No meat please. Thanks

Fire roast a pepper (Just burn it over an open flame until the skin is black and blistered, stick it in a paper bag for 5 minutes and then just wipe the black off).
Chop up the pepper, and a fresh tomato and half of a small onion. Throw it in a pan with a little butter, a pinch of onion and some freshly ground pepper. THAT is a fabulous filling for an omelette. Add a little cheese (I like cheddar, but it's really good with anything) and you will be a happy girl. You can also sautee in some baby spinach if you want more green!
I also really like plain herb omelettes - Ina Garten has a good one with chervil, parsley, tarragon & chives.

I like sautéed onions, spinach and swiss cheese. It tastes just like a spinach quiche and you really don't miss the bacon. I will eat it on a brown rice gluten free tortilla sometimes.
I also like mushrooms and spinach and cheese.

I love just an old fashioned egg white and cheese omelette - they taste the best.
This is going to sound a little funky -- but I LOVE with eggs hotdogs but try to limit how many times we have this. Basically, take hot dogs, cut into pieces, cook them in skillet until they cook through - then add the egg white on top (and some feta cheese sprinkled), and voila. So delicious.

I usually saute some minced onion in a pan. While the onions are browning, I mix chopped cilantro, tomato, and a couple dashes of curry powder into some egg whites. I pour it over the onions and make my omelet. If I'm in the mood, I'll add some shredded cheese on top.

Salsa, low fat cheddar cheese and taco seasoning. if you want you can jalepenos and/or wrap it all in a tortilla

OMG! this is right up my alley!! i would NEVER EVER have thought of taco seasoning. please explain how you do that? i'm thinking of the powder...
