Egglpant recipes
Any easy ones? I just bought an eggplant and don't know what to do with it!

We usually cut it up into slice, fry it EVOO and put over speggetti...very yummy...

The other night I sliced them and put them on a spray coated cookie sheet, salted and pepper, baked for about 45 minutes at 350.
Then I put them in tomatoes sauce with mozz cheese (I use fat free) and baked until bubbly.
So good and much healthier than fried

Slice them lenghtwise, roast them, then put a cheese mixture in them to make eggplant rolatini (like lasagna rolls with but eggplant)
