I did a search and found nothing... can we post Atkin or South Beach recipes??
My DH started Atkins on Monday and I really need some recipes.

I have every South Beach Diet Recipe from their website - when I was a member, I printed out every single one and they are different from the ones in the books...

I made stuffed chicken breast the other day..I really liked it and so did DH.
combine spinach(frozen kind is fine) petite diced tomatoes, sour cream, shredded cheese and spices - I use cayenne,black pepper, salt, garlic powder, onion powder, and sazon(spanish seasoning found in regular supermarkets) The mixture shouldnt be too liquidy but not super thick either..somewhere in the middle.
Slit the chicken breast on the side like you're making a pocket and stuff w/ the mixture. Sprinke salt, pepper and some grill seasoning on the chicken breast and drizzle some EVOO. If you have left over mixture pour that on top also.
Bake at 350.
I just eyeball everything so I dont really have measurements.

You should get the Atkins cookbook. My friend has it and the recipes look really good. She made a cucumber dip/sauce that was tasty.

The Atkins cookbook is very good for ideas plus their website has a ton.
I follow Atkins...but I admit that I take in more vegetables than maybe recommended. No problem doing that though. Tonight I am making a chicken salad:
Chicken Breast (As many as you want) Wishbone Italian Dressing (regular) Kosher Salt Parsely Mayo (regular) Tomato chopped Cucumber chopped Shredded Cheese (I use Cheddar)
I marinade chicken breasts in Italian dressing (regular not reduced fat) with a little kosher salt and parsely. I usually let marinade over night and then put them in the oven (8 minutes on each side) - broil. Chop the tomato and cucumber (I remove the seeds so the salad doesn't get too much liquid). Cut the cooked chicken into pieces and mix all the ingredients together.
I usually have it either in romain lettuce wraps, plain, or with a low carb pita. I love it!

Atkins has a nice recipe for Shrimp Scampi that is really good too. I serve that over some arugula...yum!

There is a great website called lowcarbfriends.com (thanks Christine )
They have a TON of recipes on there - I've made some and made some side dishes for thanksgiving last year from there.

South Beach is so good........ got to prevention.com.. they have a whole discussion board of people on it and they post tons of Phase 1,2 and 3 recipes.
