I love making any type of cream of vegetable soup...I just roast the veggies on a tray with garlic and onion and then puree and add cream. So easy and delicious.

Split pea Chicken, bacon, corn chowder Chicken Gnocchi soup (I got this at Olive Garden once and recreated it from a copy-kat recuipe. I was going to make the soup from scratch but ran out of time so I used the canned soup. Its fast and yummy.)
Olive Garden Chicken and Gnocchi Soup – ala Nora 3 small cans Cream of Chicken Soup 3 small cans of water 1 ½ - 2 pound diced cooked chicken 1 bag baby spinach 3+ gloves garlic, grated ½ small onion, grated 1 package Gnocchi
Cook chicken in seasoned water. I like garlic powder, onion powder and a few shots of Tabasco.
Drain chicken. Add canned soup and 3 cans of water. Stir. Add chicken back. Grate garlic and onion into pot.
When heated, add spinach.
Start cooking Gnocchi to directions. My package said cook 2 minutes in boiling salted water. Mine were frozen, cooked about 3 minutes.
Add gnocchi to soup and serve.

Yes, it will work with spinach too.
In a soup pot-Saute garlic and onion in oil cut up sweet or spicy sausage into little pieces (I take the sausage out of the casing and make little balls out of the meat) Brown the meat Pour 2 boxes of chicken stock in the pot or enough liquid to make a large pot of soup Put escarole or spinach in the pot once it comes to a boil put in about 1/2 cup or 1 cup of baby pasta (I use ditalini) Put in a can of cannellini beans season everything with salt, red pepper flakes and some grated cheese. Once the pasta is done, serve and enjoy!

favorite soup recipes?
I make stuffed pepper soup, chicken pot pie soup, and chicken tortilla soup. Those are regular dinners in the fall and winter at my house.

This is my favorite soup to make...I could eat it every day!
Pasta e Fagioli
1 lb soy crumbles 1 (29 oz.) can diced tomatoes 2 (14 oz.) cans Great Northern beans, undrained 10 oz. box frozen chopped spinach, thawed and squeezed dry 2 (14.5 oz.) cans vegetable broth 1 (8 oz.) can tomato sauce 3 cups water 1 TBS minced garlic 1 TBS dried parsley 1 tsp garlic powder 1.5 tsp salt 1/2 tsp ground black pepper 1/2 tsp dried basil 1/2 lb whole-wheat seashell or small, shaped pasta Grated or shredded soy or fat-free parmesan (optional)
In a large stockpot, brown soy crumbles. Add diced tomatoes, beans, spinach, vegetable broth, tomato sauce, water, garlic, parsley, garlic powder, salt, pepper and basil. Bring to a boil; reduce heat and let simmer, covered, for 40 minutes. Add pasta and cook uncovered until pasta is tender (approximately 10 minutes). Ladle soup into individual serving bowls. Top with cheese, if desired.
Serves 6 - 8

God how I LOVE Pasta e Fagioli soup. Question- on this recipe- what is the soy crumbles a substitue for? I usually go meatless on mine anyway

I sub soy crumbles for 1 lb of lean ground beef, which is how the recipe was written when I got it. Sometimes I don't want the crumbles and I just leave them out. I like my soup brothy anyway, and it tastes great without them as well! :)

Interesting! I have never come across a recipe for it with ground beef. I think I prefer it meatless myself!
