fiesta themed party..need help with
food..for apps i was going to do guacamole and taquitos (sp) and thats all i know.
for dinner what can i make? i was going to just do a hero and a hot dish to make it easy for people to eat. (they are a young crowd.) or does anyone have any ideas for food..? thank you !

You can do a burrito/taco bar. It's easy for you and interactive for your guests. A tray of beef, a tray of chicken and a tray of pork for the carnivores.. then trays of refried beans, yellow rice, sauteed onions, sauteed mushrooms, lettuce, fresh chopped tomato, cilantro, guacamole, pico, sour cream - everything they could want on a burrito or taco.
I'd do some pitchers of mojito and a bowl of sangria.
For apps.. some grilled quesadillas, some roasted shrimp, chips with dip and maybe some empanadas and tamales.
Dessert - Frozen Mexican Hot Chocolate and Tres Leches cupcakes.

These are two of my favorites.
Chicken tacos are a good crowd pleaser. I would serve with pico de gallo, sour cream, and cheese, and guac. On the side you can do a mexican style rice.

You can do fajitas too. Buy some flank or skirt steak, marianate it overnight preferrably (you can find marinade recipes online, some have beer whihc makes the meat nice and tender) and then grill it. The ends can be well done for the people that like their meat well done and then the thicker inside portions can be slightly more rare for those that prefer it that way. You can have spanish rice, refried beans, some pico de gallo (onion, tomato, cilantro) some red/orange/green peppers/onions grilled too - place them in an aluminum foil packet with some reserved marinade.

definitely do a taco bar... so easy and always a crowd pleaser! you can offer beef and chicken!
burrito bar is good too...
