For those who make really good meatballs...

The last 2 times I made meatballs they didn't come out right. I like when they are kinda dry, light and fall apart... I hate when they are too moist & heavy (which is how they were the last time) and when you try to cut them in half they don't crumble at all. Does this make any sense... what am I doing wrong???

I think to get them drier and crumblier, you'd need more breadcrumb but less egg....

I am kinda the opposite.. I don't like drier meatballs. I don't really like them heavy and dense - If you don't want them to be as dense, try using more breadcrumb. I would also suggest baking them instead of frying.

I use 1/2 beef, 1/4 veal and 1/4 pork, breadcrumbs, egg and romano cheese. They are a good consistency...not to bready and not too meaty.

I fry them and then cook them the rest of the way in the sauce.

I can't really help with the bake time.

I "fry" them on my griddle, but I don't fry them in oil.

I just brown them on all sides before before throwing them into the sauce to finish cooking.

using oil to fry them may be causing them to be a bit heavier...so maybe you could fry w/o the oil.

I also add milk to mine.

I bake them & then DH fries them when he's ready to use them.

Try using wet bread instead of breadcrumbs. I find this works better. I also just brown them and then dump into my sauce.

To make them less "mushy" either use less liquid (egg, water, milk) or add more bread crumbs.

I usually brown mine on all sides to get them firm and hold then throw them into the sauce for remainder of cooking.

I bake them in the oven first..(I use pork and turkey.) then I add them to the sauce.

It's actually a WW recipe but these are the best meatballs I have tastedChat Icon

Try to use moistened white bread (crustless) in place of breadcrumbs -
They come out more 'moist' but not heavy -

Of course I think MY Mom makes the best meatballs ever ........Chat Icon

Thanks for all the suggestions! I'm going to try more breadcrumb, less water/milk and fry them, but not using oil.

i use the recipe in the fannie farmer cookbook and my dh LOVES them!!! he gets so excited when i make them. i used ground turkey or chicken instead of beef

1lb ground beef
1/2 cup dried bread crumbs
1 clove garlic
2 tablespoons minced fresh parsley
1 tablespoon fresh basil
1 egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons of oil
4 cups of tomato sauce

combine the beef, bread crumbs, garlic, parsley, basil, egg, salt and pepper. mix thouroughly and shape into balls 1 1/2 inches in diameter. melt oil in the saucepan. brown the meatballs lightly on all sides; drain off the fat. add the tomato sauce, cover and simmer 25 minutes.

I do the same but I put pieces of italian bread into instead of breadcrumbs

I use the following:

Beef
Sausage
onions
garlic
breadcrumbs
parsley
basil
dash of oregano
dash of sugar (Its a Sicilian thing)
pepper
egg
romano cheese
olive oil


Fry it in a pan until brown... let it simmer in tomato sauce for a few hours.

Delish.

Here's my recipe:

1lb ground beef
1 egg
1 cup of breadcrumbs
salt, pepper, garlic powder, onions, parsley & romano cheese

I don't fry them, I cook them on a baking sheet in the oven at 350 for about 30-40 minutes, turning and flipping them throughout. Then I put them in my sauce for a few hours.
