THANKS for all your help!
I made meatballs tonight (they are still cooking in the sauce) but they came out soooo good (crumbly like I wanted). I think I took a little bit of everyone's ideas and I used breadcrumb AND moistened white bread, dash of sugar, less egg and water... mixed with the other ingredients. Delish!!!

I use breadcrumb and one egg. I also cook them in a pan with oil. Try the breadcrumb and dry seasonings. 1 egg should be enough just to hold the meat together. HTH
