Freezing tips?

Hi everyone!!

I'm a new working mom and I want to try freezing dinners to save time during the week.

Does anyone have any tips for me? e.g. great recipes, products that are best for freezing, ways to package, etc.

Hi There!

I like using ziploc freezer bags for certain items (like meatballs) because it keeps well and saves room in the freezer. I also use freezer bags WITH wax paper (especially for uncooked meats like burgers or chicken). The wax paper makes it really easy to then separate the meat, especially if I only want to take some and not all of it.

For already prepared meals, I like using glass/pyrex storage containers. I got a pack at bed bath and beyond. Everything stays really fresh that way.

I find most things freeze well. I have never tried freezing a rice based dish though, so I can't vouch for rice.

I freeze breads, a lot of soups, chilis, many italian meals (ziti, lasagna, chicken parm, eggplant parm, meatballs, etc.) as well as shredded chicken, stirfry veggies, etc.

What types of food or recipes would you like? I can help you find some good ones.

I also recommend looking into the blog Annie Eat's... she has also done a few posts on freezing food for friends who have had babies.

I do a lot of freezing meals. Some of my favorites are chilii, meatloaf, and all kinds of casseroles. I just make more than DH and I need and freeze the leftovers usually in 2 portion increments. I also freeze things like extra taco meat and shredded buffalo chicken which can be used in a variety of dishes.

I have a foodsaver so I'll freeze leftovers in the bags and then pull them out a day ahead to defrost in the fridge. Then I can just pop them in the microwave, toss the bag, and dinner and the dishes are done! Everything stays very fresh and lasts for a long time.

You can definitely freeze rice. I always make a large batch of rice and portion them off in freezer bags. Almost anything you make regularly can be frozen. Things like casseroles and such, I assemble but don't cook and freeze, then just pop into oven to cook when needed. Whenever you plan on a meal, make a second batch and freeze. Cook once have food twice.
