what kind? and how good are they?

if they are perfectly sweet and succulent, I wouldn't cook them. I'd make a salad...but if they aren't awesome, just good, I'd cook them...maybe make a sauce or stuff them.

I pretty much live off of tomato and fresh mozzerella salads when tomatoes are in season.

easy fresh sauce.

dice an onion and few cloves of garlic (I'd do maybe 2 cloves or so per pound)

sautee in olive oil until fragrant and translucent....add salt, pepper, dried or fresh oregano, crushed red pepper and sautee and few more minutes.

add either wine or red wine. reduce a few minutes.

add diced tomatoes. cover and cook about 20 minutes stirring periodically and checking for seasoning (you may need to add more salt)

I don't put sugar in...the wine usually helps with that. If you have it, add some fresh basil towards the end and hit it off with parm cheese.

you can add sausage, chicken, or shrimp...or anything else really to this sauce.

I love it over ravioli.Chat Icon

Fresh salsa!

4 tomatoes, chopped
1/2 cup finely diced onion
5 serrano chiles, finely chopped (or to taste) OR 1 jalepeno pepper minced
2/3 cup chopped fresh cilantro
1 teaspoon salt
2 tablespoons lime juice
2 garlic cloves chopped
(avacado chopped; optional}

DIRECTIONS
In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, garlic and lime juice. Chill for one hour in the refrigerator before serving.
