Re: Fried Rice???
Make a pot of plain white rice and put it aside (we actually like to put it in the fridge overnight - we also like it slightly undercooked). In a wok, heat up a little veg oil and add some chopped up chicken breast that you have tossed in a mixture of flour, salt and pepper. Stir around until no longer pink and cooked through. Remove chicken and add to bowl of rice. Add a can of bamboo shoots, a can of water chestnuts and some chopped onion. Stir fry for a minute until the onion is soft and then add some frozen chopped snow peas, some strips of grated carrot and a little sesame oil. Remove veggies and stir into rice. In the wok (no need to clean or wipe out) - add a little butter and some eggs. Scramble the eggs and throw into the rice/chicken mix. Add Soy Sauce to the rice mix and stir well. I go by taste/color. Start with a couple of Tablespoons and if you need more, add more. Heat up a pan (I don't use the wok here.. I like something with more surface). Add some oil and butter and add some of the rice mix into the pan in a layer. Cook for a few minutes over medium high heat and then start to turn over - it's not a pancake so it won't turn in one piece but you want to try to do your best to get the other side fried brown and a little toasted as best you can. Fry in batches just like that and serve.
If you want to go healthier - then just add the rice and chicken back to the wok after the veggies are cooked and add the soy sauce right into the rice mix in the wok and cook until warm.

Re: Fried Rice???
here's my mom's recipe:
use day-old cooked rice small onion, diced 2 scrambled eggs soy sauce whatever meat you want: chicken, pork, ham
Sautee your veggies and meats with some oil until they're cooked. Then throw in rice, stir until well-mixed. Then put in soy sauce until it reaches your desired colored. When everything is warmed, add the scrambled egg (chopped). just before serving, add scallions.

Re: Fried Rice???
I don't really follow much of a recipe.
i usually start by cooking diced chicken breasts and then add frozen veggies. I then throw in cooked brown rice (Trader Joes ahs cooked frozen brown rice which I have used). i cook it all together and then usually find different sauce recipes. i mix in the sauce and then serve it with bean sprouts on top.

Re: Fried Rice???
Here's mine that my mom taught me. Not the healthiest but my family loves it.
-Cooked white rice, set aside -One egg -One small onion chopped -One clove garlic finely minced -4-5 strips of bacon -1 tablespoon butter -2-3 scallions chopped -2 heaping tablespoons toasted sesame seeds -Soy sauce -Salt & pepper
In frying pan, cook bacon until crisp, remove bacon from pan, crumble and set aside. In pan with bacon fat and butter, saute onion and garlic until soft, but do not brown. While that is cooking, scramble egg. Push onion/garlic to side of pan, add egg and cook. When egg is done, mix with onion and garlic. Add rice, sesame seeds, salt, pepper and soy sauce stirring/tossing constantly until well coated. When ready to serve add scallions.
ETA: I only use Kikkoman soy sauce which gives it flavor rather than just a salty taste than regular ss.
