I don't make it much like the restaurants, but my mom used to make it this way and now I do and it's one of our family's favorite.
scramble 6-10 eggs (depending on your taste - we like a lot of eggs) cut up and fry 1 pound bacon. cut up and fry a pork chop or two (my mom always made this the day after she made pork chops. We don't usually eat pork chops. ) use bacon fat to fry it up dice some carrots and onions - you could add other veggies as well - fry in bacon grease.
I combine all of these with a decent amount of rice - maybe 2 cups uncooked. I put it all in a big frying pan with butter and OO. and wait for the rice to start sizzling. After a bit I add soy sauce and serve.
