I made Brie Bites the other night for a cocktail party and they were a hit.
Buy the premade mini Phyllo Shells (I got them 2/$4 by Athens in Waldbaums).
Put a little bit of seedless raspberry jam in the bottom of each.
remove the rid from about 1/2lb of Brie and cut into small cubes.
Smoosh the cubes between your fingers and place on top of the jam.
Top each with a raw pecan half.
Bake at 425 for about 8 minutes.
SOOO Yummy!!
This isn't my pcture but they look like this:
ETA: I used 1/2 lb of cheese and 1/2 of a small jar of jam for 2 boxes (30) shells.

Giada made fried ravioli on Oprah the other day. They looked so easy to make.
Dip fresh ravioli into buttermilk, then breadcrumbs, fry in Olive Oil and then sprinkle w/parmesan cheese.
Serve w/marinara sauce

I roll prociutto around fresh mozz, cut into bite size pieces then drizzle with balsamic vinegar or dressing (depends on taste preference) and serve cold.
And then there are pigs in a blanket - they are a crowdpleaser!

I make an artichoke dip that is really good:
1 jar of marinated artichokes 1 cup parm. cheese 1 garlic clove diced 1 cup mayonnaise
Cut artichokes into small pieces. Combine all ingredients. Cook in 350 degree oven for 15 min. or until brown on top. Delicious!

I make melted cheese balls -- and they're a HUGE hit everytime.
1 can of pillsbury Grands biscuits grated cheese PepperJack and Mozerella cheese (cubed) melted butter
Take each biscuit and pull into 2 halves to double the number of biscuits you have. Take one piece of cheese and place in the center of each biscuit. Enclose the cheese in the biscuit and roll into a ball. Then roll each ball in the melted butter, then in the grated cheese.
Spray a cake pan (or pie dish) with PAM. Place the cheese balls in the pan (about 1/2 inch apart -- they will spread slightly). Set oven to 350 and bake until golden brown (about 20 minutes).
Serve warm with pizza sauce for dipping.

cheese bread.
take long loaf of french bread. cut in half
spread butter/margarine. sprinkle oregano Top with sliced Motzarella.
bake around 10-15 minues- till cheese lightly toasted

Baked brie in Puff Pastry
1/2 package frozon puff pastry, thawed 1 (8 ounce) package brie cheese, round 1/8 cup toasted almond, slices (optional) 1/4 cup apricot or raspberry preserves
1 Preheat oven to 425. 2 Lightly grease cookie sheet. 3 Roll puff pastry out slightly. 4 Place cheese wheel on top (leave rind on). 5 Place preserves on top of cheese. 6 Place almonds on top of preseves. 7 Bundle Puff Pastry up and around the cheese. 8 Bake for 20-25 minutes. 9 Let cool for five minutes. 10 Serve with your favorite crackers.

Jen, you can do the fonitna, asparagus and prosciutto rolls....I'll give you the recipe for the lemon aioli....
Or you can make escarole bread...I might make it myself.....

sweat and sour meatballs in a bread bowl
make sauce out of 1 jar of chili sauce and jar grape jelly- heat up together in saucepan.
Take ground meat or turkey meat with some onion or garlic powder- make mini balls and put in sauce. cook in sauce until meatballs are cooked through. pour into bread bowl....

I made this for thanksgiving after we had gone to Foxwoods and had something similar. It was a huge hit. I came up with the recipie myself.
8 oz. shredded Mozzarella 8 oz. shredded Monterrey Jack 1/2 cup Hellman's mayonnaise 1 bag defrosted artichoke hearts 4 oz. shredded mild Cheddar Mix together above ingredients (cut hearts into small pieces). Bake in a covered casserole dish, at 350 degrees, about 25 minutes until melted and lightly browned.

I made these stuffed mushrooms by Giada and they are delicious.
Ingredients 1/2 cup Italian-style dried bread crumbs 1/2 cup grated Pecorino Romano 2 garlic cloves, peeled and minced 2 tablespoons chopped fresh Italian parsley leaves 1 tablespoon chopped fresh mint leaves Salt and freshly ground black pepper 1/3 cup extra-virgin olive oil 28 large (2 1/2-inch-diameter) white mushrooms, stemmed Directions Preheat the oven to 400 degrees F.
Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.
Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.

this sounds good. reviews say not to use pancetta that is sliced too thinly.
Pancetta Crisps
Yield Makes 6 servings
Ingredients 12 thin slices pancetta (about 1/3 lb.) 1 Bartlett pear 1/2 (4-oz.) package goat cheese, crumbled Freshly cracked pepper Honey Garnish: fresh thyme sprigs Preparation
1. Arrange pancetta slices in a single layer on an aluminum foil-lined baking sheet.
2. Bake at 450° for 8 to 10 minutes or until golden. Transfer to a paper towel-lined wire rack using a spatula. Let stand 10 minutes or until crisp.
3. Core pear with an apple corer. Cut pear crosswise into 12 thin rings. Arrange on a serving platter. Top evenly with pancetta and goat cheese; sprinkle with pepper. Drizzle with honey just before serving. Garnish, if desired.
